- Preheat the oven to 350°F (175°C). Grease a 9x13-inch baking pan.Spread the topping coconut onto a baking sheet and toast for 5–8 minutes, stirring occasionally, until golden brown. Set aside to cool completely.
- In a medium bowl, whisk together flour, baking soda, baking powder, and salt. Set aside.
- In a large mixing bowl or stand mixer, beat together softened butter, oil, granulated sugar, and brown sugar. Mix on medium-high speed until light and fluffy, about 3–4 minutes.Beat in the eggs one at a time. Add the mashed bananas, vanilla extract, and coconut extract, mixing until fully combined.
- Reduce the mixer speed to low.Add the dry ingredients in three additions, alternating with the buttermilk in two additions, beginning and ending with the flour mixture.Mix only until combined. Fold in the shredded coconut using a spatula.
- Spread the batter evenly into the prepared baking pan.Bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean.Place the cake on a wire rack and cool completely before frosting.
- In a large bowl, beat the softened cream cheese and butter until smooth and creamy.Gradually add the powdered sugar one cup at a time. Add the vanilla extract and beat on high speed for about 2 minutes until light and fluffy.If needed, add the heavy cream or milk to slightly thin the frosting.
- Spread the cream cheese frosting evenly over the cooled cake.Top generously with the toasted coconut before slicing and serving.
