Ingredients
  

  • 1 (14 oz) Package cocktail sausages (such as Lit'l Smokies)
  • 1 lb Thin-cut bacon
  • 1 cup Brown sugar packed
  • 4 tbsp Unsalted butter melted
  • ½ tsp Smoked paprika optional, for smokiness
  • Pinch of cayenne pepper optional, for heat

Method
 

  1. Preheat Oven
    Preheat your oven to 375°F (190°C). Line a baking sheet with foil and place a wire rack on top (for crispier bacon).
  2. Prepare the Bacon
    Cut each slice of bacon into thirds (or halves, depending on the size of your sausages).
  3. Wrap the Smokies
    Wrap one piece of bacon around each sausage and secure with a toothpick. Place seam-side down on the prepared rack.
  4. Make Brown Sugar Butter Coating
    In a small bowl, mix together the brown sugar, melted butter, smoked paprika, and cayenne (if using). It should resemble a sandy paste.
  5. Coat the Smokies
    Brush or spoon the brown sugar butter mixture evenly over the bacon-wrapped sausages. For extra caramelization, roll them directly in the mixture before placing on the rack.
  6. Bake
    Bake for 30-35 minutes, or until the bacon is crispy and the sugar-butter coating is bubbling and caramelized.
  7. Serve
    Let cool slightly before serving (the sugar will be very hot right out of the oven). Serve warm from the tray or transfer to a platter for entertaining.
