- Preheat OvenPreheat your oven to 375°F (190°C). Line a baking sheet with foil and place a wire rack on top (for crispier bacon).
- Prepare the BaconCut each slice of bacon into thirds (or halves, depending on the size of your sausages).
- Wrap the SmokiesWrap one piece of bacon around each sausage and secure with a toothpick. Place seam-side down on the prepared rack.
- Make Brown Sugar Butter CoatingIn a small bowl, mix together the brown sugar, melted butter, smoked paprika, and cayenne (if using). It should resemble a sandy paste.
- Coat the Smokies Brush or spoon the brown sugar butter mixture evenly over the bacon-wrapped sausages. For extra caramelization, roll them directly in the mixture before placing on the rack.
- BakeBake for 30-35 minutes, or until the bacon is crispy and the sugar-butter coating is bubbling and caramelized.
- ServeLet cool slightly before serving (the sugar will be very hot right out of the oven). Serve warm from the tray or transfer to a platter for entertaining.
