Ingredients

  • cups Ripe mashed bananas about 3 bananas
  • ½ cup Unsalted butter melted
  • ½ cup Brown sugar light or dark
  • ¼ cup Granulated sugar
  • 2 Large eggs
  • 1 tsp Vanilla extract
  • cup All-purpose flour
  • 1 tsp Baking soda
  • ½ tsp Salt
  • 1 tsp Ground cinnamon optional
  • ½ cup Chopped walnuts or chocolate chips optional

Equipment

  • 9x5 inch ceramic loaf pan
  • Mixing bowls 1 large, 1 medium
  • Whisk or fork for mashing and mixing
  • Spatula
  • Measuring cups and spoons

Method

  1. Preheat & Prep:
Preheat oven to 350°F (175°C). Lightly grease a 9x5 ceramic loaf pan and line with a parchment sling if desired for easy removal.
  2. Mix Wet Ingredients:
In a large bowl, mash bananas until mostly smooth. Stir in melted butter, brown sugar, granulated sugar, eggs, and vanilla until combined.
  3. Mix Dry Ingredients:
In a separate bowl, whisk together flour, baking soda, salt, and cinnamon.
  4. Combine:
Gently fold the dry ingredients into the wet just until no flour streaks remain. Do not overmix. Fold in nuts or chocolate chips if using.
  5. Bake:
Pour the batter into your prepared loaf pan and smooth the top. Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
  6. Cool & Serve:
Let the banana bread cool in the pan for 15–20 minutes, then transfer to a wire rack to cool completely before slicing.
