Ingredients
  

For the Cake
  • cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ¾ cup unsalted butter softened
  • 1 cup granulated sugar
  • 4 large eggs room temperature
  • 1 tsp vanilla extract
  • ½ tsp coconut extract optional, but for extra flavor
  • ½ cup canned coconut milk
  • ½ cup sweetened shredded coconut
For the Coconut Cream Drizzle
  • ¼ cup coconut milk
  • ½ cup powdered sugar sifted
  • 1 tsp vanilla extract
For Garnish
  • coconut flakes

Equipment

  • 9x5 loaf pan
  • Mixing bowls

Method
 

  1. Preheat & Prep
    Preheat oven to 350°F (175°C).
    Grease a 9x5-inch loaf pan.
  2. Mix Dry Ingredients
    In a medium bowl, whisk together:
    flour, baking powder, baking soda, salt, shredded coconut.
    Set aside.
  3. Cream Butter & Sugar
    In a large bowl, beat the butter and sugar on medium-high speed until light and fluffy, about 3–4 minutes.
    Add eggs, one at a time, mixing well after each.
    Add vanilla and coconut extract, mixing until combined.
  4. Combine Wet & Dry Ingredients
    Alternate adding the dry ingredients and coconut milk to the butter mixture:
    Start and end with the dry ingredients
    Mix just until incorporated, don’t overmix
  5. Bake
    Pour batter into the prepared loaf pan and smooth the top.
    Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean.
    Let the cake cool in the pan for 10 minutes, then transfer to a wire rack.
  6. Coconut Cream Drizzle (Optional)
    Whisk together powdered sugar, coconut milk, and vanilla until smooth.
    Drizzle over the warm or cooled loaf.
    Sprinkle toasted coconut flakes on top for extra texture.
  7. Serve
    Slice thick and enjoy with coffee, tea, or as a sweet treat at brunch.
