Preheat your oven to 400°F. Line your rimmed baking sheet with aluminum foil, then place the oven-safe wire rack directly on top of the foil.
Take one slice of bacon and wrap it tightly around a hot dog in a spiral pattern, ensuring it covers from end to end with minimal overlapping. If the ends feel loose, you can secure them with a toothpick. Repeat for all four franks.
Place the wrapped hot dogs on the wire rack, leaving an inch of space between each one so the hot air can circulate. Bake for 15 to 20 minutes, or until the bacon is golden and crisp.
Carefully remove the tray from the oven. Pull out the toothpicks if you used them. Place the buns directly onto the wire rack, tuck a bacon-wrapped hot dog into each bun, and immediately pile the shredded cheddar cheese right on top. Pop the tray back into the oven for 2 to 3 minutes until the buns are warm and the cheese is completely melted.
Remove from the oven and drizzle barbecue sauce over the melted cheese and top with crispy fried onions, pickled jalapenos and red onion. Serve immediately.
