Garlic Parmesan Mozzarella Sticks

Garlic Parmesan Mozzarella Sticks are crispy, golden on the outside, and filled with warm, stretchy mozzarella on the inside. Each stick is coated in a flavorful panko and Parmesan breadcrumb mixture seasoned with garlic, oregano, and smoked paprika. After frying, the sticks are lightly brushed with garlic butter and sprinkled with fresh parsley for extra flavor.

Ingredients
  

  • 1 lb block mozzarella cheese
  • ½ cup all-purpose flour
  • 3 large eggs beaten well
  • cups panko breadcrumbs
  • ½ cup finely grated parmesan
  • 1 tbsp garlic powder
  • 1 tsp dried oregano
  • ½ tsp salt
  • ½ tsp smoked paprika
  • 2 tbsp butter melted
  • ½ tsp garlic salt
  • 1 tsp fresh parsley very finely minced

Equipment

Method
 

  1. Start by cutting the block mozzarella into uniform rectangles about ½ inch thick.
    Pat them dry with a paper towel. Moisture on the surface of the cheese is the main reason breading slips off during frying.
  2. Set up three bowls: Flour, Beaten Eggs, and the Panko/Parmesan mixture.
    Flour: Roll the stick and shake off the excess.
    Egg: Submerge completely.
    Panko: Roll and press firmly.
    Repeat: Dip the breaded stick back into the egg and one last time into the Panko.
  3. Arrange the sticks on a baking sheet lined with parchment paper. Freeze for at least 90 minutes.
  4. Heat 1–2 inches of neutral oil in a heavy skillet to 350°F. Fry 3–4 sticks at a time for 3-4 minutes. Turn them once. As soon as the outside is a deep golden brown, remove them immediately.
  5. While the sticks are hot, whisk the garlic salt and minced parsley into the melted butter.
    Place the hot sticks on a wire rack.
    Using a pastry brush, lightly dab the garlic butter over the tops and sides of the sticks.
    Garnish with parmesan cheese.
