- Start by cutting the block mozzarella into uniform rectangles about ½ inch thick.Pat them dry with a paper towel. Moisture on the surface of the cheese is the main reason breading slips off during frying.
- Set up three bowls: Flour, Beaten Eggs, and the Panko/Parmesan mixture. Flour: Roll the stick and shake off the excess.Egg: Submerge completely.Panko: Roll and press firmly.Repeat: Dip the breaded stick back into the egg and one last time into the Panko.
- Arrange the sticks on a baking sheet lined with parchment paper. Freeze for at least 90 minutes.
- Heat 1–2 inches of neutral oil in a heavy skillet to 350°F. Fry 3–4 sticks at a time for 3-4 minutes. Turn them once. As soon as the outside is a deep golden brown, remove them immediately.
- While the sticks are hot, whisk the garlic salt and minced parsley into the melted butter.Place the hot sticks on a wire rack.Using a pastry brush, lightly dab the garlic butter over the tops and sides of the sticks.Garnish with parmesan cheese.
