- Activate the yeastIn a small bowl, combine warm water, warm milk, yeast, and sugar.Stir gently and let sit for about 5–7 minutes, until foamy.
- Make the doughIn a large bowl (or stand mixer with dough hook), whisk together flour and salt.Add yeast mixture, egg, and softened butter.Mix until a shaggy dough forms.Knead by hand for about 8–10 minutes (or with mixer on medium for about 5 minutes) until dough is smooth and elastic.If it’s very sticky, add flour 1 tbsp at a time (but keep dough soft, not dry).
- First riseShape dough into a ball and place it in a lightly oiled bowl.Cover with plastic wrap or a clean towel.Let rise in a warm spot until doubled, about 1–1.5 hours.
- Shape the bunsPunch down the dough gently.Divide into 8 equal pieces.Shape each piece into a smooth ball by tucking dough under itself.Place on a parchment-lined baking sheet, spacing about 2–3 inches apart.Flatten each slightly with your palm.
- Second riseCover loosely with a towel.Let rise again until puffy, about 30–40 minutes.
- BakePreheat oven to 375°F (190°C).Brush tops of buns gently with egg wash.Sprinkle with sesame seeds or seasoning if desired.Bake for 12–15 minutes, until golden brown on top.
- CoolCool on a wire rack for at least 10–15 minutes before slicing.
