- Prep Your OvenPreheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Make the Biscuit DoughIn a large mixing bowl, whisk together the flour, baking powder, sugar, baking soda, and salt.Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs with pea-sized bits of butter.Pour in the buttermilk and stir gently with a fork until just combined. The dough should be shaggy, not smooth.
- Shape the BiscuitsTurn the dough out onto a lightly floured surface and gently knead it 5–6 times (don’t overwork).Pat the dough into a ¾-inch thick rectangle. Fold the dough in half, pat it back down, and repeat 2 more times, this creates flaky layers.Using a 2½-inch biscuit cutter, cut out biscuits and place them close together on the baking sheet. Gather scraps and repeat until all dough is used.Brush the tops lightly with buttermilk.
- BakeBake for 12–15 minutes, until the biscuits are puffed and golden brown on top.
- Make the Honey Butter GlazeWhile the biscuits are baking, whisk together melted butter and honey in a small bowl.
- Glaze & ServeRemove the biscuits from the oven and immediately brush them generously with the warm honey butter. Sprinkle with flaky sea salt if desired. Serve warm.
