- 4 Boneless, skinless chicken breasts
- 3 tbsp Olive oil divided

- 1 cup Crumbled feta cheese
- 3 tbsp Honey

Preheat ovento 400°F (200°C). Prep chicken: Pat chicken breasts dry. Rub each breast with 2 tbsp olive oil and season generously with garlic powder, salt and pepper on both sides. Bake: Place chicken breasts in a lightly oiled baking dish. Bake uncovered for 20 minutes, or until almost cooked through (internal temp about 160°F/71°C). Make hot honey sauce: While chicken bakes, whisk together honey, red pepper flakes, minced garlic, lemon juice, and 1 tbsp olive oil. Add feta & sauce: Remove baking dish from oven. Spoon crumbled feta evenly over each chicken breast, then drizzle with the hot honey sauce. Broil: Switch oven to broil. Place baking dish under broiler for 3-5 minutes, watching carefully, until the feta is slightly golden and bubbly. Garnish & serve: Sprinkle with fresh parsley and serve with lemon wedges on the side.
