Ingredients
  

  • 4 Boneless, skinless chicken breasts
  • 3 tbsp Olive oil divided
  • Salt & pepper
  • 1 tsp Garlic Powder
  • 1 cup Crumbled feta cheese
  • 3 tbsp Honey
  • 1 tsp Red pepper flakes adjust to your heat preference
  • 2 cloves Garlic minced
  • 1 tbsp Fresh lemon juice
  • 1 tbsp Fresh parsley chopped
  • Lemon wedges optional, for serving

Equipment

  • Small mixing bowl

Method
 

  1. Preheat oven
    to 400°F (200°C).
  2. Prep chicken:
    Pat chicken breasts dry. Rub each breast with 2 tbsp olive oil and season generously with garlic powder, salt and pepper on both sides.
  3. Bake:
    Place chicken breasts in a lightly oiled baking dish. Bake uncovered for 20 minutes, or until almost cooked through (internal temp about 160°F/71°C).
  4. Make hot honey sauce:
    While chicken bakes, whisk together honey, red pepper flakes, minced garlic, lemon juice, and 1 tbsp olive oil.
  5. Add feta & sauce:
    Remove baking dish from oven. Spoon crumbled feta evenly over each chicken breast, then drizzle with the hot honey sauce.
  6. Broil:
    Switch oven to broil. Place baking dish under broiler for 3-5 minutes, watching carefully, until the feta is slightly golden and bubbly.
  7. Garnish & serve:
    Sprinkle with fresh parsley and serve with lemon wedges on the side.
