Ingredients
  

  • 1 lb Fresh baby spinach washed and roughly chopped
  • 3 tbsp Unsalted butter
  • 3 cloves Garlic minced
  • 1 Small shallot finely chopped
  • ½ cup Heavy cream
  • cup Grated parmesan cheese
  • 1 Lemon zest and juice
  • Salt and freshly ground black pepper to taste
  • Pinch of red pepper flakes optional

Method
 

  1. Sauté aromatics:
    In a large skillet, melt butter over medium heat. Add shallots and garlic and sauté until fragrant and softened, about 2-3 minutes.
  2. Cook spinach:
    Add chopped spinach to the pan, stirring often until wilted and tender, about 4-5 minutes.
  3. Make it creamy:
    Pour in heavy cream and stir to combine. Let it simmer gently for 3-4 minutes until the cream thickens slightly.
  4. Add flavor:
    Stir in Parmesan cheese, lemon zest, and lemon juice. Season with salt, pepper, and red pepper flakes (if using). Stir until cheese melts and everything is well combined.
