Ingredients
  

  • 1 lb pork tenderloin
  • 4-5 slices bacon cooked until very crisp and finely chopped
  • ½ cup panko breadcrumbs
  • ¼ cup maple syrup
  • 2 tbsp Dijon mustard
  • 1 tbsp brown sugar
  • ½ tsp garlic powder
  • ½ tsp salt & black pepper

  • Small mixing bowls

Method
 

  1. Prep the Crumble In a small bowl, mix your chopped crispy bacon and panko breadcrumbs. Set this aside.
  2. Preheat your oven to 400°F. Season the pork tenderloin with salt and pepper. In an oven-safe skillet, sear the pork over medium-high heat for 2-3 minutes per side until browned all over.
  3. Whisk the maple syrup, Dijon, brown sugar, and garlic powder together. While the pork is still in the skillet (heat turned off), brush a thick layer of this glaze over the top and sides of the meat.
  4. Press the bacon and panko mixture firmly onto the top and sides of the glazed pork.
  5. Place the skillet in the oven and roast for 12–15 minutes. Remove when the internal temperature hits 145°F.
  6. Let the pork rest for 5–10 minutes. If you have leftover glaze, simmer it in a small pan for a minute until thickened and drizzle it over the slices right before serving.
