Oven-Baked Garlic Parmesan Wings

These Crispy Garlic Parmesan Boneless Wings are oven-baked until golden and crunchy, then tossed in a rich garlic parmesan butter glaze. A seasoned flour coating made with garlic powder, onion powder, smoked paprika, and herbs creates a flavorful crust while baking on a wire rack ensures even crisping without deep frying. Once hot from the oven, the wings are tossed with melted butter, fresh garlic, parmesan, and parsley so the sauce melts into the crust and coats every piece.

Ingredients
  

  • ½ cup all-purpose flour
  • 2 tbsp corstarch
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • 1 tsp dried parsley
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp cayenne pepper
  • 2 tbsp finely grated parmesan cheese
  • 1.5 lbs chicken breast cut into 1-inch pieces
  • 2 eggs beaten
  • cooking oil spray
The Garlic Parmesan Glaze
  • ¼ cup unsalted butter melted
  • cup grated parmesan cheese
  • 3-4 cloves garlic minced
  • 1 tbsp fresh parsley finely chopped

Equipment

  • Large rimmed baking sheet
  • Wire cooling rack
  • Mixing bowls

Method
 

  1. Preheat your oven to 400°F. Place a wire cooling rack inside a large rimmed baking sheet. Lightly spray the wire rack with cooking oil to prevent sticking.
  2. In a shallow bowl, whisk together the flour, cornstarch, and all the seasonings (garlic powder through cayenne) and the 2 tbsp of Parmesan. In a separate bowl, beat the two eggs.
  3. Bread the Chicken
    Pat the chicken pieces dry with a paper towel first.
    Dip each piece into the egg wash, then into the seasoned flour.
    Use your hands to firmly press the flour mixture into the chicken. You want a thick, visible coating of spices on every piece.
  4. Arrange the chicken on the wire rack, leaving space between each piece. Give the tops of the wings a thorough misting with the cooking oil spray.
  5. Bake for 18–22 minutes.
    Rotate the baking sheet halfway through if your oven has hot spots. The wings are done when they are golden brown and reach an internal temperature of 165°F.
  6. While the wings are baking, whisk together the melted butter, minced garlic, Parmesan, and fresh parsley in a large bowl. As soon as the wings come out of the oven, toss them in the sauce while they are piping hot so the cheese melts slightly and sticks to the crust.
