Place the bacon in a cold skillet or on a sheet pan in the oven at 400°F. Cook until it is deeply golden and very crispy. Drain on paper towels.
Split your warm biscuits in half. If they have cooled down, give them a quick toast in a pan with a little butter to get the interior edges crisp.
Spread a generous teaspoon of red pepper jelly on the top half of each biscuit.
On the bottom half of the biscuit, add a large scoop (about 30g or 2 tbsp) of pimento cheese. Spread it slightly, but keep some height to it.
Break the bacon strips in half and layer 4 small pieces (2 full strips) over the pimento cheese and close the sandwich.
