Pimento Bacon Biscuit Sandwiches

These Pimento Bacon Biscuit Sandwiches are layered with creamy sharp pimento cheese, crispy thick-cut bacon, and sweet red pepper jelly tucked inside warm buttermilk biscuits. Ingredients
  

  • 6 large buttermilk biscuits store-bought or homemade
  • ¾ cup sharp pimento cheese
  • 12 slices thick-cut bacon
  • 4 tbsp red pepper jelly
  • fresh chives or green onions finely chopped (optional)

  • large skillet or sheet pan
  • Tongs
  • Paper towels
  • serrated knife
  • small spoon or spatula

Method
 

  1. Place the bacon in a cold skillet or on a sheet pan in the oven at 400°F. Cook until it is deeply golden and very crispy. Drain on paper towels.
  2. Split your warm biscuits in half. If they have cooled down, give them a quick toast in a pan with a little butter to get the interior edges crisp.
  3. Spread a generous teaspoon of red pepper jelly on the top half of each biscuit.
  4. On the bottom half of the biscuit, add a large scoop (about 30g or 2 tbsp) of pimento cheese. Spread it slightly, but keep some height to it.
  5. Break the bacon strips in half and layer 4 small pieces (2 full strips) over the pimento cheese and close the sandwich.
