Ingredients
  

For the Cookies
  • ½ cup Unsalted butter softened
  • ½ cup Granulated sugar
  • 1 egg
  • 1 tsp Vanilla extract
  • ½ tsp Almond extract optional, but recommended
  • 1 cup Yellow cake mix dry mix only, not prepared
  • 1 cup All-purpose flour
  • ½ tsp Baking powder
  • ¼ tsp Salt
For the Pink Frosting
  • ¼ cup Unsalted butter softened
  • cups Powdered sugar
  • 1-2 tbsp Milk or cream
  • ¼ tsp Vanilla extract
  • tsp Almond extract
  • A drop or two of pink gel food coloring

Equipment

  • Mixing bowls large and medium
  • Electric mixer or hand mixer
  • Rubber spatula or wooden spoon
  • Measuring cups and spoons
  • Baking Sheet
  • Parchment paper
  • Cookie scoop
  • Spoon or spatula for frosting

Method
 

  1. Preheat Oven:
    Preheat to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Make the Dough:
    In a large bowl, cream together butter and sugar until light and fluffy (2–3 minutes).
    Add the egg, vanilla, and almond extract; mix until fully combined.
    In a separate bowl, whisk together yellow cake mix, flour, baking powder, and salt.
    Gradually mix dry ingredients into the wet until a soft, thick dough forms.
  3. Shape & Bake:
    Scoop out about ¼ cup of dough for each cookie. Roll into balls and slightly flatten on the baking sheet.
    Bake for 12–14 minutes, until puffed and set on the edges. The centers will look soft but will firm up as they cool.
    Let cookies cool completely before frosting.
  4. Make the Frosting:
    Beat softened butter until smooth.
    Add powdered sugar, 1 tbsp milk, vanilla, and almond extract. Beat until fluffy and spreadable, adding more milk if needed.
    Color with pink gel food coloring to your desired shade.
