Smoky Bacon & Sharp Cheddar Rolls

These Smoky Bacon & Sharp Cheddar Rolls are soft, fluffy homemade rolls filled with crispy bacon and layers of melted sharp cheddar cheese. The enriched dough bakes up tender and golden while the savory filling adds smoky, cheesy flavor in every bite.

Ingredients
  

For the Dough
  • cups all-purpose flour
  • 1 packet (2¼ tsp) instant yeast
  • 1 cup whole milk warmed to 110℉
  • 2 tbsp granulated sugar
  • 1 tsp salt
  • 4 tbsp unsalted butter melted and slightly cooled
  • 1 large egg room temperature
For the Filling
  • 8-10 slices bacon cooked crisp and chopped
  • 2 cups sharp cheddar cheese shredded
  • 2 tbsp unsalted butter softened
  • 2 green onions thinly sliced
  • ½ tsp cracked black pepper

Equipment

  • Large mixing bowl (or stand mixer with dough hook)
  • Measuring cups & spoons

  • Sharp knife or pizza cutter
  • 9x13-inch baking dish
  • Pastry brush

Method
 

  1. In a large bowl or the bowl of a stand mixer, combine the warm milk, sugar, and yeast. Let it sit for 5 minutes until foamy. Add the melted butter, egg, salt, and 2 cups of flour.
  2. Gradually add the remaining flour. Knead for 5–7 minutes by hand or mixer until the dough is smooth and slightly tacky. Place in a greased bowl, cover, and let rise in a warm spot for 1 hour or until doubled in size.
  3. Punch the dough down and turn it out onto a lightly floured surface. Roll it into a large rectangle (about 12x18 inches).
  4. Spread the 2 tablespoons of softened butter over the dough, leaving a small border. Evenly sprinkle the shredded cheddar, crispy bacon, green onions, and black pepper.
  5. Use a sharp knife or pizza cutter to cut 8 even strips. Then tightly roll each strip.
  6. Place the rolls in a greased 9x13 inch baking pan. Cover and let rise for another 30–45 minutes.
  7. Preheat your oven to 375°F (190°C). Bake for 20–25 minutes until the tops are golden brown and the cheese is bubbly.
  8. Brush the tops with a little extra melted butter immediately after taking them out of the oven for a soft, shiny crust.
