Soft Pretzel Bites

These soft pretzel bites are warm, chewy, and perfect for dipping. Made with a simple yeast dough and finished with a quick baking soda boil, they bake up golden on the outside and tender on the inside. Serve them fresh from the oven with cheese sauce, honey mustard, or marinara for an easy snack.

Ingredients
  

For the dough
  • cups warm water (105-110℉)
  • tsp (1 packet) active dry yeast
  • 2 tbsp granulated sugar
  • 4 cups all-purpose flour
  • 1 tsp salt
  • 2 tbsp unsalted butter melted
For Boiling Solution
  • 10 cups water
  • cup baking soda
For Topping
  • 1 large egg + 1 tbsp water for egg wash
  • coarse sea salt for sprinkling
Optional Dips
  • honey mustard, cheese sauce, or marinara

Method
 

Make the Dough
  1. In a large bowl, combine warm water, yeast, and sugar. Let sit 5 minutes until foamy.
    Stir in melted butter, then add flour and salt. Mix until a sticky dough forms.
    Knead 5–7 minutes on a floured surface until smooth and elastic.
    Place in a lightly oiled bowl, cover, and let rise 1 hour, or until doubled.
Preheat Oven & Prepare Boiling Solution
  1. Preheat oven to 450°F. Line 2 baking sheets with parchment paper.
    In a large pot, bring 10 cups water and 2/3 cup baking soda to a boil.
Shape Pretzel Bites
  1. Punch down the dough and divide it into 4 portions.
    Roll each portion into a long rope (about ½ inch thick).
    Cut ropes into 1–1.5 inch pieces to form bites.
Boil & Bake
  1. Using a slotted spoon, carefully drop a few bites at a time into the boiling baking soda water. Boil 30 seconds, then remove and place on prepared baking sheets.
    Brush each bite with egg wash and sprinkle with coarse salt.
    Bake 12–15 minutes, until golden brown.
Serve
  1. Let cool slightly and serve warm with your favorite dipping sauces.
