Ingredients
  

The Salad Base
  • 4-5 cups broccoli florets
  • 1 cup sharp cheddar cheese shredded
  • 1 cup sweet corn fresh, thawed frozen, or charred grilled corn
  • 1 large red bell pepper finely diced
  • cup red onion finely diced
The Creamy Lime Dressing
  • ½ cup plain Greek yogurt or sour cream
  • 2 tbsp mayonnaise
  • 2 tbsp fresh lime juice
  • ½ tsp ground cumin
  • ½ tsp smoked paprika
  • ½ tsp garlic powder
  • salt and black pepper to taste

Method
 

  1. In a small bowl, blend the sour cream, mayonnaise, lime juice, cumin, smoked paprika, garlic powder, salt, and pepper until smooth and creamy.
  2.  In a large mixing bowl, toss together the broccoli, cheddar cheese cubes, corn, red bell pepper and red onion.
  3. Pour the dressing over the salad and mix until everything is evenly coated. Pop it in the fridge for at least 30 minutes to let the flavors marry and the broccoli slightly soften.
