- Prepare the dressing:In a small bowl, whisk together mayonnaise, sour cream (or Greek yogurt), Dijon mustard, honey, and vinegar until smooth. Stir in minced shallot and herbs. Season with salt and pepper to taste. Refrigerate for at least 20 minutes to let flavors meld.
- Assemble the salad:In a large bowl or serving platter, layer the spring mix greens. Evenly scatter the blueberries, peach slices, mozzarella balls, prosciutto slices, cherry tomatoes, and red onion over the greens.
