Ingredients
  

For the Salad
  • 6 cups Spring mix greens
  • 1 cup Fresh blueberries
  • 2 Ripe peaches thinly sliced
  • 8 oz Fresh mozzarella balls drained
  • 4 oz Prosciutto thinly sliced
  • 1 cup Cherry tomatoes halved
  • ¼ cup Red onion thinly sliced
For the Creamy Honey-Dijon Dressing
  • ½ cup Mayonnaise
  • 3 tbsp Sour cream or Greek yogurt
  • 1 tbsp Dijon mustard
  • 1 tbsp Honey
  • 1 tbsp Apple cider vinegar or white wine vinegar
  • 1 Small shallot finely minced
  • 1 tsp Fresh thyme or tarragon chopped, or ½ tsp dried
  • Salt & Fresh ground pepper to taste

  • Small mixing bowl for dressing
  • Whisk or fork

Method
 

  1. Prepare the dressing:
    In a small bowl, whisk together mayonnaise, sour cream (or Greek yogurt), Dijon mustard, honey, and vinegar until smooth. Stir in minced shallot and herbs. Season with salt and pepper to taste. Refrigerate for at least 20 minutes to let flavors meld.
  2. Assemble the salad:
    In a large bowl or serving platter, layer the spring mix greens. Evenly scatter the blueberries, peach slices, mozzarella balls, prosciutto slices, cherry tomatoes, and red onion over the greens.
  3. Dress and serve:
    Drizzle the creamy honey-Dijon dressing over the salad just before serving. Toss gently to coat all ingredients, or serve the dressing on the side for guests to add as they like.
  4. Optional garnish:
    Add a few fresh thyme sprigs or extra herbs for a beautiful finishing touch.
