- Soak in Ice WaterStart by placing your cut sweet potato fries into a large bowl of ice water. Let them soak for at least 20–30 minutes, or up to an hour. This step helps remove surface starch and gives you a crisper fry when baked.
- Dry ThoroughlyDrain the fries and spread them out on a clean kitchen towel or paper towels. Pat them dry, really dry. Any moisture left on the surface will cause steaming instead of crisping in the oven.
- Toss with CornstarchTransfer the dry fries to a bowl and sprinkle with cornstarch. Toss until evenly coated. This creates a light layer that helps achieve a crispy exterior without frying.
- Season and OilAdd olive oil, garlic powder, salt, and black pepper to the fries. Toss again to coat every piece evenly. You should see a light shimmer on the fries, enough oil to help them roast without being greasy.
- Bake to PerfectionPreheat your oven to 425°F (220°C). Line a baking sheet with parchment paper and spread the fries out in a single layer, making sure there’s space between each one.Bake for 15 minutes, flip them carefully, and return to the oven for another 15–20 minutes. Watch closely during the last 5–10 minutes, they go from golden to burnt quickly!
- Truffle + ToppingsAs soon as they come out of the oven, drizzle the fries with truffle oil. A little goes a long way, start with 1 teaspoon and add more to taste. Sprinkle with freshly grated Parmesan and chopped parsley. Add extra salt if needed.
