The Ultimate Chocolate Chip Cookie Cake

This Chocolate Chip Cookie Cake is a soft, chewy dessert that serves 10–12 people and bakes in just 20–25 minutes. Made with classic cookie ingredients plus cornstarch for extra softness, it’s baked in a round pan and optionally topped with creamy buttercream frosting and colorful sprinkles. Ingredients
  

For the Cookie Cake
  • ¾ cup Unsalted butter softened
  • 1 cup Brown sugar packed
  • ¼ cup Granulated sugar
  • 1 large egg + 1 egg yolk
  • 1 tbsp Vanilla extract
  • 2 cups All-purpose flour
  • 2 tsp Cornstarch for extra softness
  • ½ tsp Baking soda
  • ½ tsp Salt
  • cups Semi-sweet or milk chocolate chips
  • ½ cup Rainbow sprinkles or mini M&Ms
For the Frosting
  • ½ cup Unsalted butter softened
  • cups Powdered sugar
  • 2 tbsp Heavy cream or milk
  • 1 tsp Vanilla extract
  • Pinch of salt

Equipment

  • 10 or 9 inch round cake pan or springform pan
  • Mixing bowls 1 large and 1 medium
  • Electric or hand mixer
  • Wooden spoon or spatula
  • Measuring cups and spoons

Method
 

  1. Preheat & Prep:
    Preheat oven to 350°F (175°C). Grease a 9-inch round cake pan or springform pan, and line the bottom with parchment paper for easy removal.
  2. Make the Dough:
    In a large bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy (about 2–3 minutes).
    Add the egg, egg yolk, and vanilla. Mix until combined.
    In a separate bowl, whisk together flour, cornstarch, baking soda, and salt. Slowly add dry ingredients to wet until just combined. Fold in chocolate chips (and sprinkles or M&Ms if using).
  3. Shape & Bake:
    Press the dough evenly into the prepared pan. (Use a spatula or your fingers to spread it all the way to the edges.)
    Bake for 20–25 minutes, until the edges are golden brown and the center is just set. Don’t overbake—it will continue to cook slightly in the pan.
    Let cool completely before frosting or slicing.
  4. Make the Frosting (Optional):
    Beat the softened butter until smooth. Add powdered sugar, cream, vanilla, and salt. Beat until fluffy. Add food coloring if desired.
    Pipe frosting around the edges or decorate the whole top with swirls and sprinkles!
