- Make the garlic aioli: In a small bowl, stir together the mayonnaise, minced garlic, lemon juice (if using), salt, and pepper. Taste and adjust to your liking. Set aside.
- Assemble the sandwiches:Spread garlic aioli on one side of each slice of bread.Layer turkey slices, Brie, and pear slices on 5 of the bread slices.Top each with a handful of arugula, then place the remaining bread slices on top, aioli side down.
- Toast the sandwiches:Heat a large skillet or griddle over medium heat.Lightly butter the outside of each sandwich.Toast for about 3–4 minutes per side, or until the bread is golden brown and the Brie is just starting to melt.
- Serve: Slice in half if desired and enjoy warm.
