Roast the Spaghetti Squash
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Rub the cut sides of the squash with oil, salt, and pepper. Place face-down and roast for 35–45 minutes until tender.
- Once cool enough to handle, scrape into long strands with a fork.
Form & Sear the Meatballs
- In a bowl, combine ground turkey, ricotta, panko, egg, Parmesan, garlic, fresh basil, parsley, Italian seasoning, onion powder, red pepper flakes, salt, and pepper. Mix gently until just combined.
- Roll into 12–14 meatballs.
- Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Sear meatballs for 3–4 minutes per side until browned on the outside, then transfer to a baking sheet and bake at 400°F for 10 minutes to finish cooking through (internal temp 165°F).
Build the Tuscan Sauce & Assemble
- In the same skillet over medium heat, melt the butter. Add minced garlic and sun-dried tomatoes; sauté for 1–2 minutes until fragrant.
- Pour in chicken broth to deglaze the pan, scraping up any browned bits from the meatballs.
- Stir in the heavy cream and bring to a gentle simmer for 2 minutes.
- Toss in the fresh baby spinach and stir for 1 minute until just wilted.
- Reduce heat to low, stir in the Parmesan cheese until smooth, then add the spaghetti squash strands. Toss gently with tongs so the strands absorb the sauce.
- Fold the cooked meatballs into the pan to warm through. Serve topped with fresh basil, extra Parmesan, and toasted pine nuts.
