Place the ricotta in a medium mixing bowl.
Add the olive oil, lemon zest, lemon juice, salt, pepper, and parmesan (if using).
Using a whisk (or a sturdy spoon), whisk briskly for about 2–3 minutes until the ricotta becomes creamier and lighter.(You can also use a hand mixer on medium speed for a slightly fluffier texture.) Taste and adjust seasoning: add more lemon juice for brightness, more olive oil for silkiness, or extra salt to bring out flavor.
Spoon into a bowl, swirl, drizzle with olive oil, sprinkle with fresh herbs, pepper, lemon zest, chili flakes, or honey. (I did pepper)
