Ingredients
  

  • cups Whole milk ricotta cheese
  • 2-3 tbsp Extra virgin oil plus more for drizzling
  • Zest of 1 lemon
  • 1-2 tbsp Freshly squeezed lemon juice
  • ¼ tsp Salt
  • ¼ tsp Freshly ground pepper plus more for topping
  • 1-2 tbsp Grated parmesan cheese optional

Method
 

  1. Place the ricotta in a medium mixing bowl.
  2. Add the olive oil, lemon zest, lemon juice, salt, pepper, and parmesan (if using).
  3. Using a whisk (or a sturdy spoon), whisk briskly for about 2–3 minutes until the ricotta becomes creamier and lighter.
    (You can also use a hand mixer on medium speed for a slightly fluffier texture.)
  4. Taste and adjust seasoning: add more lemon juice for brightness, more olive oil for silkiness, or extra salt to bring out flavor.
  5. Spoon into a bowl, swirl, drizzle with olive oil, sprinkle with fresh herbs, pepper, lemon zest, chili flakes, or honey. (I did pepper)
